This is an easy dish that can be frozen and cooked at a later date. The recipe is for my freezer cooking day, so the quanities are large but you can scale it down.
5 lbs Potatoes: cubed but not peeled
1/2 cup ranch dressing
1 cup sour cream or more to your taste
1/2 cup real bacon bits (not those fake crunchy kind)
1 1/2 cups shredded cheddar cheese
salt and pepper to taste
Boil potatoes until tender, drain. Mash potatoes and remainder of ingredients. Divided into casserole dishes or into freezer bags.
Let potatoes thaw overnight in fridge. Transfer potatoes, if in freezer bags, into a casserole dish and bake for 30-45 minutes at 375 degrees.
During last 10 minutes you can sprinkle top with more cheese and bake if you would like.
